As the son of a Greek, I grew up eating lamb, and still love to eat it, a lot. Definitely some of the best lamb I've had, very tender and flavorful.
I don't eat a lot of lamb. Put in Sous Vide in package at 136 for about 4 hours. Shocked and put in fridge. Brought up to temp and then decided to cook in grill pan over medium high heat. Placed a store bought prime rib rub on it when searing. I also flipped on side to sear fat for a few seconds. This was a good piece of meat. Came out perfect rare-med rare. The fat melted in my mouth. Even the kids liked it. Would def recommend it.
