Most retailers typically dry-age for 20-30+ days, if at all. This is because the longer beef is dry aged, the more difficult and critical it becomes to monitor the proper controls and process. When I first hear about someone using whisky when making their product, I'm skeptical, never expecting much. Given that opinion, I still wanted to try it because I know Meat Artisan has an excellent dry-aged steak, to begin with, so what do I gotta lose. I was not disappointed. The bourbon flavor actually does permeate the meat complementing the already strong flavor of a dry-aged steak. If you enjoy the flavor of dry-aged steak, as well as the flavors in bourbon, this should absolutely be on your list to try. If you don't already enjoy dry-aged steak, this should not be your first.
