The hanger steak, known as the “Butcher’s Cut”, is considered one of the butcher’s best kept secrets. In the old days, the butchers often kept this special cut for themselves while most of their customers came in after the more common cuts. It comes from the muscle that helps support the diaphragm between a cow’s rib and loin, its just sort of “hanging there” and it does absolutely nothing… as a result its one of the most tender steaks. A thicker cut within the Short Plate that’s full of flavor with a coarse texture.

Had never had hanger steak before, this blew me away. Such a rich flavorful steak. Will definitely be ordering more of these.
My overall experience was great. Fast shipping, great communication, and everything arrived perfectly. My only...beef... is that the prices are definitely premium. For some of the stuff like Australian wagyu etc it’s justifiable due to the scarcity. But for stuff like USDA prime, I would think you’d sell the entire full Ny strip cut to command the regular price... not just 8 Oz portions. Either way I will be a repeat customer for the higher end stuff. The owner is a really classy dude and their service is awesome.
In my opinion it was better than the Australian Wagyu Denver steak. Cooked both on cast iron at the same time. Hanger was better.

Hanger is my favorite cut by a mile. This is a great product. Butchering is fantastic and so is the quality of the cut. No tiny pieces of hanger. One nice slab vac sealed for perfect portion size. Tenderness you would expect from a prime cut. Classic beefy hanger flavor with just enough thin intramuscular for it to absorb whatever marinade, seasoning, or rub you use. Five stars.
