The hanger steak, known as the “Butcher’s Cut”, is considered one of the butcher’s best kept secrets. In the old days, the butchers often kept this special cut for themselves while most of their customers came in after the more common cuts. It comes from the muscle that helps support the diaphragm between a cow’s rib and loin, its just sort of “hanging there” and it does absolutely nothing… as a result its one of the most tender steaks. A thicker cut within the Short Plate that’s full of flavor with a coarse texture.
