A well-marbled and deliciously flavorful bone-in cut of pork that works wonderfully when roasted, braised or barbecued. It’s cut from the upper part of the loin near the shoulder, and creates the utmost in savory pulled pork dishes. Like all our pork, it’s delivered fresh to you with its flavors, juices and nutrients intact.
I cooked this for dinner tonight and it was a hit. Smoked with some apple wood at 250 until internal temperature reached 120. I then did a quick sear on high heat using a cast iron skillet.
Best Chop Ever!
Hard for me to ever say something is the best I’ve ever had but this pork chop is the best I’ve ever had. Dry brined for 2 hours, smoked to 135, seared then rested to 145. Super juicy and tender. From what I’ve seen, Meat Artisan is the only purveyor to offer Heritage Pork cut thick and as a single chop.
These bad boys are 2” thick and cut with precision. My family loves the flavor. Can be cooked multiple ways. Delicious and will Always keep me coming back for more!
These are the best pork chops I have had! I've tried them straight on the grill as well as sear/oven method. I bring them to 145-155 internal temp...and they are just perfect!
